Getting the most out of my almonds!
I recently began making my own almond milk which is amazingly easy, (and made myself a delicious latte) but I felt so bad disposing of the remaining “pulp”, so I looked into ways of salvaging it, and found a site that instructed how to make an almond meal/flour out of it, which I found to be relatively easy. There were even suggestions of recipes to use it in, subbing part of the flour out for the meal. I decided to make crackers, and honestly, I think they’re the best I’ve ever tasted! I’m so proud that I was able to get 3-4 cups of almond milk, and just under 1 cup of almond meal using only one cup of almonds! When I first ate the crackers, I put avocado on them, but I made myself a light tuna salad (I’m a pescatarian). Directions and links below!Almond milk
Soak 1 c raw almonds overnight
Strain and rinse almonds
Put in blender with 4 c water
Blend for one minute, depending on your blender. The mixture should be white and the almonds should be relatively fine
Strain into a bowl through a nut milk bag

I used a nespresso, but you can also use a keurig on the lowest cup setting, and warm the milk in the stove or the microwave. Combine one cup almond milk with espresso, add one dash of nutmeg and one dash of cinnamon, and agave nectar to taste. It’s so good!

Basically, if you have a dehydrator, use that, if you don’t, lay it out on a parchment paper lined pan and put it in a 200 degree oven for a couple of hours, using a form to break it up every so often. This is time consuming in a way, but I’m a nanny, so I work in a home, so this was easy to do at work. After it was dry, I ran it in the (dry) blender to grind it down further into a powder.
Crackers
These were so easy, and required so few ingredients!

Ingredients: 3c flour ( I subbed in the almond meal for part of the flour, so approximately 1c almond meal, 2c flour)
2tsp salt
2tsp sugar
4tbsp oil
1c water
Combine all dry ingredients thoroughly
Add oil and water, combine until a sticky dough.
Split dough in half
Flour a baking sheet and set aside
Roll out half the dough on a floured surface
You can season however you like, get creative, but what I did was grind sea salt all over first, in a small dish, I combined garlic powder, cracked peppercorns, fennel seed and rosemary pinched and sprinkled it on the dough. I cut the dough into rectangular shapes, and placed them on the floured pan. I picked then with a fork and put them in the oven for ~ 15 minutes. I say check them after ten, because some will be thicker than others, and you can take those out to cool while the others cook. Repeat with other half of dough.
Eat them plain or to them with whatever you like!I made an easy tuna salad:
Sautee lightly chopped brussels sprouts and leek with minced garlic. Chill in the fridge until cool. Combine veggie mixture with tuna, fresh basil, and finely chopped sun dried tomatoes. Mix in with light ranch dressing, and you’re done! -
Brown Lives Matter (1/27/15): The police have done it again. They have taken the life on another unarmed teenager, this time a 16-year old girl by the name of Jesse Hernandez. After shooting her multiple times, they dragged her lifeless body out the car and proceeded to cuff and search her, rather than seek medical attention. The death harkens back to another young, unarmed Latin@ the Denver police killed last year, Ryan Roquillo. The officer in that death was eventually cleared. Prayers for peace and justice to this young girl’s family. #staywoke #farfromover
